Toronto cookies

I originally made these cookies about two months ago when I first moved over to Toronto and I’ve just kind of forgoten about the blog. So sorry for that!

  
Dale is VERY picky when it comes to food, so when I want to surprise him with food when he gets home I have to put a lot of thought into it. I still don’t have a job here, so I’ve been sending out a lot of CVs, doing some volunteer work (I’m waiting for an answer for TEDxToronto!!) and doing the old “housegirlfriend” thing… Amongst other activities to keep myself busy and productive…….. Sorry, I’ll get back to the cookies. 

As I was saying, Dale is picky when it comes to food so I have to be careful when I choose the ingredients. No dark chocolate, no peanut butter unless it’s a PB&J sandwich, nothing with seeds, definitely no onions, and the list goes on and on. The problem is, he had bought dark chocolate by mistake and I bought peanut butter chips and toffee because I thoooought he liked them. I don’t like wasting food, so I decided to bake us some sugar cookies with a yummy filling.

Sugar cookie recipe (serves 24):

  •  1-1/3 cups and 1 tablespoon all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup butter, melted
  • 3/4 cup white sugar
  • 1 egg
  • 1/2 teaspoon of vanilla extract

For the icing (you can make it without icing, but icing is AWESOME!):

  • 1/4 cup melted butter
  • 1-1/4 cup icing sugar
  • 1 tbsp milk
  • 1/3 tsp vanilla extract

First you spread the cookie dough so you can put a tbsp of whatever filling you want, stuff your cookie and close it up, bake for 15-25 mins depending on your elevation (Mexico City vs Toronto elevation makes A LOT of difference when it comes to cooking).

  These were mine. I used a fork to make markings so I could tell apart the fillings.
